Kheer (Sweet Rice) Recipe
Ingredients:
1/3 c of rice (medium or short grain)
10 c of milk
1 pc of bay leaf
1/4 tsp of cardamom; ground
2 Tbsps of sliced almonds; toasted lightly (optional)
1/2 c of sugar
Instructions:
Wash rice then set aside for draining. Boil milk in pot large enough to hold two times the milk’s volume.
When milk boils, adjust heat to have milk frothing and rising but will not be bubbling. Minimize time of cooking by boiling milk intensely, not covered, for about 15 min.
Remember to stir constantly with wooden spoon/spatula — this prevents milk from burning.
Mix rice with milk together with bay leaf. Stir continuously over moderate-high heat for about 20 min. until rice will break and roll with milk. Take note that volume (of milk) is lessened by a third.
Add in cardamom, almonds and sugar. Cook this for about 5 minutes before removing from heat.
Rice must only be a little thick by the time it’s taken out of heat since it thickens more when it’s refrigerated. Rice must be chilled well prior to serving.
If classic flavors are desired, rose water (1 teaspoon) and powdered saffron (few pinches) can be used as substitute for cardamom.
This serves one batch.
