Khichadi From Maja Recipe
Ingredients:
1 garam masala
1 c of basmati rice
8 c of water
3/4 c of moong dal
1/3 c of cashews (raw)
1/4 c of coconut
1/2 c of almonds (raw)
3/4 c of peas
8 cloves (whole)
1 tsp of cumin
3/4 c of carrots
1 cinnamon stick (3 inches)
1 pc of red chile (whole)
1/3 c of currants or raisins
1/4 tsp of asafetida (yellow)
1 tsp of black mustard seeds
2 tsp of sugar (opt)
1 pc of cilantro or parsley
Instructions:
Separately rinse these ingredients: dal, rice, cashews, almonds, currants and coconut. Boil water in large pan.
While boiling water, toast cashews and almonds in ghee. Add coconut right before they toast then toast them all ’til brown. Take away mixture of nuts from the pan and put aside.
Toast mustard seeds (black) and cumin in ghee. Pot must be covered when toasting since they pop. Cook this for around 1-2 minutes. Take away from the pan and put aside.
After water has boiled, add dal then cook it for 2 min. Remove foam from dal after 2 min. Add rice as well as other spices. Cover then boil for around a minute.
Next, turn off fire under rice mix and leave sitting. Toast peas and carrots in ghee.
Over rice mix, sprinkle the garam masala and put in raisins, vegetables and nut mixture’s half (in exact order). Again, sprinkle the garam masala.
Next, cover mixture then leave sitting for some time. Put rice into big bowl, stirring until every ingredient is totally blended in.
Sprinkle more of garam masala then garnish with leftover nuts. This serves 8.
