Kohnen’s Biryani Supremo Recipe
Ingredients:
1 Tbsp of oil
4 pcs cloves
2/3 c of long grain rice (basmati best)
1 stick of cinnamon (2-inch)
1 Tbsp of ground turmeric
1/2 Tbsp of ground black pepper
1 & 1/4 c of chicken broth
2 pcs of chicken (thigh); cooked and boned
1 pc of bay leaf
1/3 c of raisins (golden)
1 tsp of ground cumin
2 pcs of hard-boiled egg
2 pcs of sliced tomato
1 pc of onion; fried flakes
—Fried Onion Flakes—
1/2 c of dried onion flakes
1 Tbsp of oil
Instructions:
In 1.5-quart saucepan, seethe oil over moderate heat. Then add rice, stirring ’til it starts to turn brown. Next, put in pepper, turmeric, cinnamon and cloves.
After stirring for one minute, pour broth into mixture then add cumin and bay or salam leaf. Boil, cover then minimize heat. Simmer mixture for around 40 min.
Put in raisins and chicken, stir, cover then remove from stove and make it sit for some time prior to serving. Use egg, sliced tomato and onion flakes for garnishing.
To fry onion flakes, seethe oil over moderate heat in pan. Add onion flakes (dried), stirring until crisp and brown. Store this well inside container (airtight).
