Kumror Bhate Recipe
Ingredients:
2 Tbsps of mustard oil
1 tsp of seeded and minced chile (green)
1/2 tsp of mustard seeds (black)
1/2 tsp of turmeric
1/2 tsp of salt
2 c of cooked and mashed butternut squash
3 Tbsps of lime extract
1 cooked rice
1 slivered chile (green)
Instructions:
Over minimal heat, seethe oil then fry seeds. When they begin popping, add turmeric and chile. Stir for some time. Then put in squash and salt.
Stir-fry this for around 2 min. Take out of heat. Mix lime extract. Serve with plain rice, using slivered chiles as garnishing.
This serves 4.
