Kumror Ghanto Recipe
Ingredients:
1 pc of bay leaf
2 Tbsps of veg. oil
1/4 tsp of kalonji seeds
2 tsp of water
1/4 tsp of turmeric
1 pc of chile (red) ; dried
4 c of cubed butternut squash
1 tsp of chile (green); seeded and minced
1/2 tsp of salt
1/4 c of water
1/2 tsp of sugar
1 tsp of mustard seeds (black); ground
1/4 c of shredded coconut
Instructions:
In skillet, seethe oil with moderate heat. Fry chile (red) and bay leaf until chile turns black. For some seconds, fry seeds. Add chile (red) and turmeric then stir. Mix in squash, butternut, sugar, water and salt.
Cover then simmer for around 10 min. Mix paste (mustard) with sauce. Cover again then simmer ’til veggies turn tender.
It should not be mushy. Gently mix in coconut. Take away from stove then top with cilantro.
This serves 4.
