Kushli (Coconut & Cream Of Wheat Dessert) Recipe
Ingredients:
A pinch of baking soda
A pinch of salt
1/2 c of water
6 Tbsps of butter or oleo
1/2 c of coconut (fresh); shredded
1 c of all-purpose flour
2 Tbsps of blanched almonds
1 c of wheat cream
1 c of sugar
2 Tbsps of raisins
10 pcs of cardamom pods
1 veg. oil
Instructions:
Sieve salt, baking soda and flour together. Put 2 tablespoons of butter/oleo. Make thick dough using water (1/2 cup). Put aside.
Prepare pastry stuffing in skillet by first heating leftover butter/oleo. Add in almonds, wheat cream and coconut. Cook this ’til mixture turns golden.
Take out seeds in all cardamom pods. Mix the seeds with raisins and sugar. Then cook this ’til sugar dissolves completely for around 5-7 minutes.
Dough must now be divided into twelve equal parts. Roll every part into 4-inch round.
On round’s half, put filling, making sure to leave border (1/4-inch) around edge. Over mixture, fold remaining half then seal the edges. Seethe oil and fry pastries ’til they turn golden.
This serves 12.
