Lal Saaker Ghanto (Red Chard & Eggplant) Recipe

Ingredients:

2 Tbsps of veg. oil
8 c of red chard; chopped coarsely
1 pc of chile (red); dried
1/4 tsp of spice powder (five)
1 tsp of chile (green); seeded and minced
1 c of onions; chopped finely
1/4 tsp of turmeric
1 tsp of sugar
1/2 tsp of salt
1 c of water
1/4 tsp of garam masala
3.5 c of cubed eggplant
Onion rings (garnishing)

Instructions:

Steam then use blender to puree chard. Put aside.

Over moderate heat, seethe oil inside skillet. Fry chile (red) until appearing to have darkened. Add powdered spice, frying ’til it starts crackling. Mix in onion then stir-fry ’til it turns brown.

Next, put in turmeric, chile (green), sugar and salt. Pour water and boil. Slightly minimize heat, adding eggplant. Cover mixture, simmering until eggplant becomes soft.

Uncover, add chard (pureed) then cook mixture for around 1 minute, stirring constantly.

Take away from stove and mix in garam masala. Use onions as garnishing then serve. Very good with bread and peas (pigeon).

This serves 4.
