Lamb Curry With Yogurt Recipe
Ingredients:
2 cloves of garlic; minced
4 pcs of green chiles; chopped
2 Tbsps of coriander seeds; ground
1 Tbsp of ginger (fresh); minced
1 lg minced onion
1 tsp of cinnamon
2 tsp of turmeric; ground
1 tsp of cumin seeds; ground
1 tsp of mustard seeds; ground
4 c of yogurt (unflavored)
2 lbs of lamb (boneless); cubed
2 Tbsps of butter; clarified
1 lg onion; cut in slices
A pinch of salt
Instructions:
Put ginger, chiles, onion (minced), yogurt and garlic in blender. Process ’til mixed well.
Spread mixture onto lamb, coating well. Then, cover. Refrigerate it for about 3 hrs.
Saute onion (sliced) in butter. Without letting it turn brown, put in lamb plus yogurt mixture. Mix everything together then cover.
Simmer ’til meat appears tender for 1-1.5 hrs. Season using salt.
This serves 4.
