Lamb Vindaloo Recipe
Ingredients:
2 lbs of lamb; cut in cubes
1 Tbsp of cumin seeds
2 Tbsps of coriander seeds
14 cloves of garlic; crushed
2 lbs of tomatoes; crushed
2 medium-sized onions
1/2 tsp of cardamom seeds
6 pcs of bay leaf
1 pc of fresh ginger; finely chopped (2-inch)
1/2 tsp of pepper (black); ground
2 medium-sized potatoes
1/2 tsp of cinnamon
2 Tbsps of butter
1/2 tsp of cloves
1/2 tsp of cayenne
1 c of wine vinegar
1 Tbsp of turmeric
2 tsp of mustard seeds; ground
Instructions:
Roast coriander and cumin seeds lightly by cooking without oil and constantly stirring for about one minute. Grind then combine these into paste together with ginger, garlic, vinegar and spices.
Put lamb into marinade, mixing well. Then refrigerate this for about 3-24 hrs., stirring every couple of hours. Chop potatoes and onions finely then saute for about 5 min. in butter.
Put in lamb plus spice paste, simmering for about 30 min. over minimal heat. Marinating adds more flavor plus tenderizes meat but may not be done if needed. This serves 4.
