Lemon Cashew Rice (Nibu Daar Pullao) Recipe


Lemon Cashew Rice (Nibu Daar Pullao) Recipe

Ingredients:

2 Tbsp of oil (canola)
1 tsp of mustard seeds (black)
1/2 tsp of urad dal; split
2 c of water/ veg. broth
1/2 c of cashew pcs
1/3 c of lemon extract (fresh)
1/4 tsp of sea salt
1 c of uncooked rice (basmati)
1/4 c of cilantro; chopped

Instructions:

Strain rice then put aside. Saute seeds using canola oil ’til they start popping. Add in urad dal then fry ’til dal will turn golden for around 2 min.

Add cashews and rice. Saute this for around 2 min. over moderate heat.

Pour water, salt and lemon extract.Boil. Minimize heat then cover. Simmer mixture for about 15 min. Don’t open cover when cooking.

Take away from stove and leave sitting for about 5 min. Using fork, fluff it. Use cilantro for garnishing then serve.

This serves 4.
