Lentil Stuffed Peppers Recipe
Ingredients:
4 Tbsps of veg. oil
1 tsp of seeds (cumin)
4 medium-sized bell pepper (green)
2 pcs of onion; chopped
A 1-in pc of ginger; grated
2 pcs of chilies (green)
1 Tbsp of coriander; ground
A pinch of salt and pepper
1 & 1/4 c of water
2 Tbsps of cilantro; chopped
Instructions:
Rinse and soak lentils for about 30 min. Into a skillet, heat oil (half). Add in pepper, cooking for about 3-5 min. until golden. Drain then cool.
Put leftover oil into pan. Then cook seeds (cumin) ’til they start popping. Mix chilies and onions, cooking for about 8 min. Then add coriander and ginger.
Strain lentils and put into pan along with some water. Next, stir, cover and cook this for around 15-20 min. until liquid evaporates.
Add pepper, salt and cilantro. Remove top and seeds of peppers. Stuff using lentils then replace tops. Transfer to baking bowl and bake for around 15 min. at 350 degrees F.
This serves 4.
