Lentil & Vegetable Stew Recipe
Ingredients:
8 ozs of lentils (around 1 & 1/4 c); dried
1 stalk of celery; chopped
3 c of water
1 medium-sized onion; chopped up
2 garlic cloves; chopped fine
1 Tsbp of parsley; snipped finely
2 medium-sized zucchini; sliced (1-in)
1 Tbsp of beef bouillon (instant)
1 tsp of salt
2 medium-sized potatoes, peeled and cubed (1-in)
1 tsp of cumin; ground
1 pc of lemon (wedges)
Instructions:
After boiling lentils and water, minimize heat then cover. Cook ’til lentils appear tender for around 30 min.
Mix potatoes, celery, parsley, onion, garlic, salt, cumin and bouillon then cover. Cook ’til potatoes become tender for around 20 min. before adding zucchini.
Again, cover then cook ’til zucchini tenderizes for 10-15 min.
Serve this and lemon wedges.
