Lentils With Zucchini Recipe
Ingredients:
1/2 c of lentils
2.5 c of water
3 Tbsps of ghee (oil)
1/2 tsp of turmeric
2 cloves of garlic; minced
1 pc chili (green), sliced
1 half inch slice of ginger
1/2 tsp of garam masala
1 zucchini (small), sliced
Salt to taste
1 tsp cumin (seeds)
Instruction:
Wash and rinse lentils, then boil in water with turmeric using a pot with stove set at moderate heat. Scoop off froth that develops on top while boiling.
Using another pot, saute onions and garlic in half of ghee. Add ginger, zucchini then chili and mix well while cooking for five minutes.
Pour the boiled lentils into zucchini (mixture). Dash with salt then garam masala. Cover (but partly open), reduce temperature then cook another fifteen minutes.
Using the other half of ghee, fry cumin (seeds) til color changes while sizzling. Use this to top the cooked lentils.
