Madras Meat Curry Recipe
Ingredients:
1.5 lbs beef steak (round)
2 Tbsps oil (vegetable)
1 large-sized onion; chop finely
4 cloves (whole)
4 cardamom (green) pods; bruise
3 chilies (green); seed and chop finely
2 chilies (red, dried); seed and crush
2 cloves of garlic; crushed
1/4 c of water
1 fresh slice (1 inch) of ginger; grated
2 tsps coriander; ground
2 tsps turmeric; ground
1/4 c tamarind nectar
Salt for seasoning
Lettuces leaves (to garnish)
Instruction:
Slice meat to inch cubes and brown sides in hot oil poured in a saucepan. Using a spoon (slotted), remove meat from pan then set it aside.
Saute in hot oil the onions, cardamom and cloves. Add in the chilies, grated ginger, coriander then turmeric then cook for two minutes more.
Put back the browned beef, pour 1/2 cup of water then simmer for an hour, then serve hot.
