Mah Ki Dal (Whole Black Beans) Recipe
Ingredients:
1 c of lentils (urad or mah dal)
1 slice (1 inch) of ginger
1 pc of chili (green)
12 garlic cloves
Water
Salt (to taste)
Some ghee
Dash of turmeric
Garam masala (hot spices)
Instruction:
Wash then rinse lentils (dal) and pour into water brought to boil.
Sprinkle salt, turmeric, garlic then half of the ginger (finely chopped) then simmer over moderate temperature for two to three hours (or if using a pressurized cooker, set at 15 lbs. then cook for just half an hour).
Remove cover and allow to simmer over low heat for half an hour, then stir (and mash to make creamy) often til texture is consistent.
In a separate pan, heat ghee the stir-fry the other half of ginger, onions and chili then cook til browned.
Then spinkle with cumin and if preferred, add coriander leaves. Top the boiled lentils (dal) with this. Serve.
