Malai Murgh Recipe
Ingredients:
1 whole chicken
4 c of lukewarm water
Butter (enough for frying)
1.5 lbs of onion; finely sliced
2 ozs of almonds; blanch
1 oz of sugar
2 ozs of raisins
5 c of milk
Salt (to taste)
5 eggs (use only separated yolks)
1/4 pnt of cream
1 tsp chili powder
Instruction:
Fry blanched almonds with 2 ozs of raisins in a saucepan with melted butter over low heat. Remove and saute onions using same pan then set it aside.
Clean and wipe chicken then put in saucepan with milk then simmer til cooked. Cool then debone chicken and set meat aside.
With milk left from boiling chicken, add the sugar, powdered chili and salt then increase heat to boil and reduce liquid to two and a half cups.
Allow this to slowly cool. Beat the egg (yolks), add cream the pour into the warm milk mix then season to taste.
In a large-sized dish, evenly spread chicken meat mix at bottom of pan, sprinkle half of almonds, onions then raisins.
Layer some more chicken then top this again with raisins then nuts with onions then cover using aluminum foil. Set oven at 350 degrees F then bake for thirty minutes. Serve this meal while still warm.
