Mango Chutney Recipe 2
Ingredients:
3 lbs of mangoes (fresh and firm)
1.5 lbs sugar (brown or jaggery)
3/8 lb garlic; peeled
3/8 lb ginger (fresh); chop finely
4 ozs of raisins
4 ozs of sultanas
2 Tbsps of salt
1 Tbsp cummin; ground
1 Tbsp coriander; ground
1 Tbsp powdered chili
1 tsp ground cloves
Instruction:
Peel and using a sharp knife, slice mangoes then keep juices. Boil sliced mangoes in water. Simmer and pour in the sugar (add more water when necessary).
Cook till mango consistency is now similar to jam, then lower the heat.
Mix ginger, garlic, sultanas and raisins then puree using a processor and add this mix to mango puree, pouring additional water when needed while mango mix is still simmering.
Cook til mixture thickens, the turn off heat. Wait til mixture cools then keep in well sealed bottles. Allow it to age for four weeks then.
