Mango Kulfi Recipe
Ingredients:
1 Tbsp of gelatin (unflavored)
3 Tbsps of water
1/2 c of sugar
4 pcs of mangoes (firm and ripe)
1.5 c of whipped cream (whip more til stiff)
1 Tbsp of lemon juice
pistachios; remove shell, roast then grind
Instruction:
Cook and dissolve gelatin mixed with water for about 5 minutes at low temperature. Stir well while cooking.
Remove peel (and seed) of mangoes and puree using a processor (make about 3 1/2 cups of puree). Pour puree inside a bowl, dissolve sugar in it, squeeze lemon (juice) then fold in cream. Put in the freezer.
When almost frozen, whisk and beat til mixture becomes smooth. Pour in molds (or individual small-sized bowls), put back in the freezer.
While still soft but nearly frozen, sprinkle the pistachios and mix. Allow then to freeze completely.
