Masaledar Sem [Spicy Green Beans] Recipe
Ingredients:
1.5 lbs of beans (green); cut into two
1.5 slice of ginger (fresh); peeled & chopped
10 garlic cloves; remove peel
1 c of water
3 tsps cumin (whole seeds)
4 Tbsps of oil (vegetable)
2 tsps coriander (seeds); ground
2 medium-sized tomatoes; chop finely
Salt to taste
Ground black pepper to taste
3 Tbsps of lemon juice
Instruction:
Chop very finely the fresh ginger, garlic inside a processor with one half cup (water) and blend til smooth.
In a saucepan on moderate heat, heat oil then fry cumin (seeds) for 30 seconds then pour blended garlic and ginger.
Cook two more minutes while stirring then add coriander. Mix in tomatoes and mash. Add beans then salt then 1 cup (water) then simmer.
Cover and allow to boil then simmer for another eight to ten minutes (to make beans tender).
Take of cover, pour squeezed lemon juices then sprinkle some ground black pepper. Increase heat so excess liquid can boil off while stirring gently.
