Masoor Dal – Indian Lentils Recipe
Ingredients:
1/2 lb of pink lentils (masoor dal)
1 medium-sized onion; slice thinly
2 garlic cloves; mince
1/4 c of oil (ghee)
2 tsp coriander; ground
2 tsp cumin; ground
2 tsp turmeric; ground
1 tsp chili; ground
4 pods of cardamom
4 pcs of cloves
4 ozs of coconut (desiccated)
1 stick cinnamon (2 inches)
1.5 tsp of salt
2 medium tomatoes
Instruction:
Wash lentils with lots of cool water then put in saucepan, add water then boil. Use moderate heat to gently boil til lentils become softened.
Saute garlic and onions in a heated pan with oil. Add coriander, turmeric, chili and cumin and mix thoroughly.
After 2 minutes, add cardamoms, cinnamon and cloves then pour softened lentils and briskly stir the mixture.
Add water if needed. Season with salt then cook five minutes more. Mix dessicated coconut in two thirds cup of water the pour into pan. Dice tomatoes then stir in with the cooked lentils before you serve.
