Matar Dal (Yellow Split Pea Dal) Recipe
Ingredients:
1 c peas (split & yellow)
2.5 c of water
1/4 c of ghee (oil)
A pinch of turmeric
2.5 tsp of tomato (paste)
1 1/4 tsp of ground cumin
1 tsp of salt (to taste)
1 1/4 tsp powdered cayenne
2.5 Tbsps of lemon juice
2 pcs chilies (red)
2 medium-sized onions (yellow); diced
3/4 tsp of grated fresh ginger
1 pc of bay leaf
1 dash of cumin (seeds)
1 dash of sugar
1 dash of paprika
Instruction:
Wash and soak peas for twenty minutes with water. Drain then boil with enough water. Season with turmeric and salt. Lower heat then simmer for thirty minutes with cover.
Turn off heat then add cumin, coriander, cayenne, sugar, garlic and lemon (juice). Saute cumin, chilies, ginger and bay-leaf inside a large-sized pot with oil (ghee) for about five minutes while stirring.
Add in tomato (paste), then pour in cooked dal, and stir frequently. Dash with paprika then mix again. Continue to cook at low temperature for fifteen to twenty minutes more before serving.
