Meetha Kaddoo (Braised Butternut Squash With Jaggery) Recipe
Ingredients:
1 pc of squash (butternut)
3 Tbsps of oil
1 Tbsp of ground coriander
1/2 tsp of fenugreek (seeds)
1/2 tsp of hing
1/2 tsp of powdered cayenne (pepper)
3 Tbsps of powdered jaggery
Salt for seasoning
1 tsp of powdered mango
Instructions:
Clean squash of seeds, fibers and the peel. Cut to one and a half inch slices then set it in piles near the cooking stove.
Stir fry fenugreek (seeds) til they darken in a hot skillet with oil then stir in coriander, pepper and asafetida. Stir then add squash and cover til cooked (fifteen minutes).
Remove cover the dash with powdered mango. Lower heat then continue to stir fry for two more minutes.
Sprinkle with jaggery, continue to cook til this melts then covers squash well (this will take about three to four minutes then serve.
