Moong Samosa (Mung Bean Pastry) Recipe
Ingredients:
Water
Ghee (butter)
Dough (pastry)
Pinch of garam masala
Pinch of mango powder (green)
Pinch of asafetida
4 Tbsps of mung beans; soaked
1 Tbsp of cilantro; minched
1/2 tsp of cayenne pepper
1/2 tsp of salt
1 tsp of mustard seeds (black)
1 Tbsp of onion; diced
Instructions:
Saute onions, mustard, ginger and asafetida in two tablespoons of ghee (butter), until onions have becom tender and nicely golden in color. Mix in your garam masala, mango (powder), cayenne and salt. Stir well.
Simmer for ten minutes ’till beans have become tender. Add the cilantro, then take the pot away from fire. Equally divide filling into eight portions.
Using water, coat a pastry shaped like a half-moon into one cone. Scoop each of the cone up with filling then seal tops. Repeat procedure with the remainder of the filling.
Meanwhile, melt butter on a frying pan. Deep fry your samosas or pastries until golden in color and crispy. Drain on paper towels then serve. Makes eight pieces of samosas.
