Nan (Fried Leavened Bread) Recipe
Ingredients:
1/2 tsp of poppy seeds
1/2 tsp of salt
3 c of flour
3 packs yeast (dry)
2 whole eggs; whisked lightly
4 Tbsps of ghee or butter
1/2 tsp of bicarbonate of soda
1/2 c of milk
1 tsp of sugar
1/2 c of yogurt
Instructions:
Heat yogurt then stir milk in. Stir thoroughly. Turn off fire.
Add sugar, butter, bicarbonate of soda, yeast and eggs. In another bowl, sift salt and flour. Create a crater in the center then slowly add milk mixture. Mix until everything is incorporated.
Knead flour for twenty minutes until elastic and smooth. Coat dough using butter. Cover using damp towel then set it aside someplace warm for three hours to rise.
Coat hands using flour, punch dough down then knead for five minutes. Separate into eight balls. Flatten each of small balls to about ten inches in diameter.
Place on a flat surface then cover once more for twenty minutes using a moist cloth. Prepare griddle. Mix poppy seeds and butter then coat each bread using the poppy seeds butter.
Flip to its other side then coat this side using heated water. Transfer water-side on hot griddle then cook for one minute.
Transfer all bread inside a broiler, butter side up and cook for two minutes. Best served alongside tandoori and curry recipes.
