North Indian Recipe
Ingredients:
2 Tbsps of lime juice (fresh)
1 pc of bell pepper (green); diced
Sesame seeds
1 pc of tomato; diced
2 pcs of carrots (medium); diced
1/4 tsp of cloves (ground)
1 c of peas (green)
2 cloves of garlic; minced
1 Tbsp of ginger; minced
1/2 tsp of pepper (red)
1 tsp of turmeric
1 Tbsp of coriander powder
2 tsps of cumin powder
2 Tbsps of oil (vegetable)
8 ozs of cheese (soya)
4 c of eggplants (medium); cut into cubes
Potatoes
Instructions:
Cut egg plant lengthways. Place inside a baking pan then bake forty minutes on high 375 degrees F.
Meanwhile, boil potatoes ’till they are tender then drain. Mush up the potatoes then mix together with cheese. Saute the onions, garlic and ginger ’till onions are clear.
Mix in the carrots then cook for five minutes. Then, add the bell and red peppers, peas and tomatoes until they are tender.
Add the lime juice then mix together the potato and onion mixture. Mush up eggplants then gather to one side of serving dish. Scoop potato on top, dust with seeds (sesame) and bake fifteen minutes without cover.
Good for four persons.
