North: Moghul Beef Kheema Curry With Corn (Mal) Recipe
Ingredients:
3 Tbsps of cilantro (fresh); chopped
1/2 c of kernels
1 tsp of garam masala
2 Tbsps of water
8 pcs of blanched almonds; ground to paste
1 c of yogurt (un flavored)
1 c of water
1/2 tsp of salt
1 tsp of paprika
1/4 tsp of turmeric
1/2 tsp of cayenne
1/2 tsp of coriander powder
1/2 tsp of cumin powder
1 c of tomato; peeled
1 lb of beef (ground)
1 small ginger; crushed
3 pods of cardamom
1 c of onions; diced
2 cloves of garlic; crushed
4 pcs of cloves (whole)
1 cinnamon stick (half inch)
2 Tbsps of oil
1 stephen ceideburg
Instructions:
Saute cumin, cloves, cardamom and cinnamon. Add the onions, ginger, turmeric, garlic then cook until onions run clear. Add the beef then cook until brown. Stir constantly to break up the meat.
Add the tomato, coriander, paprika, salt and cumin then cook two minutes. Mix in the water, almond-paste and yogurt. Boil to reduce water and thicken the paste. Try to skim fat off.
Add the garam masala, cilantro and corn. Best served hot.
