Okra (Ladies Fingers) Curry Recipe
Ingredients:
Salt
6 pcs of curry (leaves)
A sprig of coriander (leaves)
1 pc of chili (red); diced
1/2 tsp of mustard (seeds)
1/2 tsp of cumin powder
3 Tbsps of oil
1/2 tsp of turmeric
225 grams of yogurt
1/2 tsp of chili hot powder
1/2 husk of desiccated coconut
225 grams of okra (ladies’ fingers)
Instructions:
Clean okra then drain on paper towels. Cut to bite sized pieces. Saute okra two minutes ’till oil is absorbed then set it aside.
Mix together the desiccated coconut and chili powder. Add cumin and turmeric plus a tablespoon of water in order to produce a velvety paste. Incorporate coconut mixture with yogurt.
Meanwhile, saute mustard plus the red chili. When seeds had all popped, return the ladies’ fingers to the saucepan then mix in the yogurt coconut mix.
Simmer for three minutes until cooked through. Garnish with curry and coriander leaves then season with salt. Good for two persons.
