Okra With Onions Recipe

Ingredients:

2 Tbsps of lime juice
2 tsps of garam masala
1 tsp of salt
1 lb of okra (fresh)
3 Tbsps tomato juice
1 tsp of coriander powder
1 tsp of turmeric powder
2 tsps of fennel seeds (whole)
1 tsp of cumin seeds (whole)
6 Tbsps of ghee
5 cloves of garlic; minced
1 pc ginger (2 inches)
4 pcs of onions (medium); diced

Instructions:

Blend together garlic, onion, one fourth cup of water and ginger in a food processor and blitz until velvety in texture. Next saute fennel and cumin stirring well then add your onion-paste and turmeric.

Simmer for twenty minutes then add your coriander and cook one minute. Mix in the tomato sauce and cook one minute more. Afterwards, clean okra and drain on paper towels. Cut into one fourth inch pieces.

Reheat your spice sauce then add okra, garam masala, salt, six tablespoons of water and lemon juice. When paste has bubbled put the lid back on then simmer for thirty minutes. Good for one person.
