Pakora Batter Recipe
Ingredients:
1/3 tsp of baking powder
9 Tbsps of chilly water
1 tsp of salt
2 tsps of coriander
1/2 tsp of turmeric
2 tsps of ghee
1 tsp of garam masala
1/4 tsp of cayenne
1 Tbsp of lime juice
1&1/3 c of flour (chick pea); sifted
Instructions:
Blend together flour, ghee, lime juice and salt plus the garam masala, cayenne and turmeric. Add five tablespoons of chilly water and whisk until batter has become smooth and no clumps are seen.
Continue adding water ’till batter is like the texture of a full cream. Cover mixture then set it aside fifteen minutes. After fifteen minutes, add baking powder then mix well.
Prepare your choice of vegetables which can be cauliflowers, egg plants, potatoes, bell peppers, zucchini or asparagus all sliced into bite sized pieces.
Melt three inches butter or ghee inside a frying pan, dunk the vegetables or pakoras in your batter then deep fry ’till nicely golden in color. Drain using kitchen towels and serve while crispy.
