Pakoras Recipe
Ingredients:
Vegetable oil
Variety of vegetables (eggplants, potatoes, green peppers, mushrooms and onions)
Water
1/2 tsp of cayenne
1/2 tsp of turmeric powder
1/2 tsp of baking powder
1&1/2 tsp of salt
2 tsps of oil; melted
2 tsps of coriander powder
1 Tbsp of lemon extract; freshly squeezed
1&1/3 c of besan/flour
Instructions:
Mix together flour, lemon juice, coriander powder, two teaspoons of oil, salt then garam masala. Add water to make a batter that is thick in consistency. Dip the vegetables in your batter then deep fry.
For the eggplants, slice eggplants into bite sized wedges. Mix in two tablespoons of khus khus to the batter then dip eggplants and deep fry ’till nicely golden in color.
For the potatoes, slice into three, dip in your batter then deep fry for five minutes ’till they are tender.
For green peppers, halve green pepper then remove seeds and cut into bite sized wedges. Dunk in batter then deep fry for five minutes.
For the mushrooms, dunk half a pound mushrooms in the batter then deep fry for five minutes.
For the onions, thinly slice into rings, dust using salt then set it aside. To the batter add chopped green onions, one tablespoon of cilantro then one whole green chili that has been minced.
Deep fry for five minutes. Good for one person.
