Par-Cooked Balti Meat (From Lowe & Davidson’s) Recipe
Ingredients:
1 tsp of garam masala
1&1/2 tsp of salt
1/2 tsp of hot powder
1 ginger (1 inch); peeled
2 tsps of turmeric
1/2 pc of pepper (green); seeds removed then diced
2 pcs of tomatoes (small); minced
5 tsps of balti
3 Tbsps of oil
2 pcs of onions; diced
2 lbs of lamb; de-boned & cut in cubes
Instructions:
Preset oven 400 degrees F. Saute onions until clear. Add tomatoes, turmeric, green bell pepper, ginger, chili powder, garam masala and salt. Once boiling, add lamb.
Remove from heat and transfer to an oven then braise lamb for forty five minutes. Stir every ten minutes, making sure there is always water within the mixture. When lamb is soft and tender, remove from mixture.
Place the left over liquid inside a food blender then blitz to a thick texture. This turns into your Balti (sauce).
Reheat the kitchen pot and place meat then balti inside then cook until lamb has tenderized further.
