Pork Vindaloo Recipe
Ingredients:
3 pcs of cloves
1 stick of cinnamon
1 pc of onion (large)
2 tsps of mustard
2 tsps of cumin
1 cube of ginger
1/2 oz of garlic
30 pcs of chilies (red)
1 sprig of curry (leaves)
1 tsp of turmeric
1 cube of ginger; chopped
5 pcs of chilies; chopped
2 tsps of salt
1 c of vinegar
1/2 tsp of mustard
2.5 lbs of pork (lean)
1 c of oil
Instructions:
Cut pork into cubes. Heat the oil then season using mustard. Mix in the sliced chilies (green) then ginger.
Fry ’till dry. Mix in turmeric then the grounded mixture of cloves, cinnamon, onion, mustard, red chilies, cumin and mustard.
Mix in meat then curry (leaves). Blend well. Cook for five minutes. Mix in vinegar then season using salt. Cook for two hours.
