Potato Masala (Potato Paliya) Recipe

Ingredients:

1/2 kl of potatoes; boiled, peeled, and mashed
2 pcs of chiles (green); chopped finely
1 pc of fresh ginger (1 inch); chopped finely
2 pc of onions (medium); chopped finely
2 pcs of tomatoes; chopped finely
Salt (to taste)
1/2 tsp of turmeric (ground)
1 c of water
1 pc of fresh coriander bunch (small); chopped finely
1/2 c of peas (green); boiled

For Tempering:
1 Tbsp of oil
1/2 tsp of asafoetida (powder)
1 tsp of mustard seed (brown)
1 tsp of cumin Seeds
1 tsp of gram dal (picked over & rinsed)
1 tsp of Bengal Gram Dal (picked over & rinsed)
1 pc of red pepper (chili); halved
Curry leaves

Instructions:

Heat oil on a saucepan then add mustard, cumin, gram dals, halved chili, curry (leaves), and asafoetida.

When mustard starts spluttering, add (green) chilies, onion, tomatoes, and ginger; saute them for 2 to 3 mins. Season with salt and add water and turmeric.

Cover and simmer it for 5 mins or till onions have cooked well. Add peas and mashed potatoes; cook them for 2 more mins or till blended well. Garnish fresh coriander.
