Potato & Onion Koora Recipe
Ingredients:
4 pcs of potatoes (medium); peeled & cut to 2-inched cubes
1/2 tsp of turmeric (ground)
1 Tbsp of oil (corn oil)
1 Tbsp of chana dal
2 pcs of dried chiles (red); broken to pieces
1 Tbsp of urad dal
2 tsps of mustard seeds
Salt (to taste)
1 pc of ginger (fresh, 1-inch); peeled & chopped finely
2 pcs of fresh chiles (green); chopped finely
1 pc of onion (large); sliced thinly
1 tsp of juice (freshly squeezed lemon)
Instructions:
Boil the cubed potatoes till they become soft. Drain then add the half of turmeric; mash gently till chunky. Let it keep its warmth.
Heat the oil on a saucepan till hot. Add fresh chiles and ginger; cook for three mins while stirring constantly.
Add the other half of turmeric, onion, and salt; cook till onions become translucent and limp, adding small amount of hot water when it is very dry.
Pour onto the potatoes; mix thoroughly. Add the juice; stir them well. Serve while warm.
